Pesto Pasta with Tomatoes and Olives

Ingredients
  

  • 1 cup Pasta
  • 2 cups Water
  • 1 tsp Salt
  • 1/3 cup Pesto sauce
  • 10 count Kalamata olives, sliced
  • 10-12 Cherry tomatoes, halved
  • 1/4 cup Sundried tomatoes
  • 1 tbsp Crushed pepper (optional)

Instructions
 

Cooking the Pasta in Instant pot

  • Add pasta, water, and salt to the inner pot. Make sure the water just barely covers the pasta.
  • Close the lid and turn the pressure knob to 'sealed position'.
  • Select 'Pressure Cook' mode and set the timer to 4 mins
  • Once the cook time is done, release the pressure immediately.
  • Rinse the cooked pasta under cold water to stop the cooking and prevent them from sticking to each other.
  • Stove top method - follow the instructions on the package.

Pesto Pasta

  • While the pasta is cooking, slice the olives and cut the cherry tomatoes.
  • In a large mixing bowl, add cooked pasta, pesto sauce, olives, cherry tomatoes, sun-dried tomatoes, and crushed pepper.
  • Mix well.
