When I want to make a quick and delicious salad this is my go-to recipe. This is a refreshing spring mix salad with fruits, veggies, and a sweet and tangy homemade Asian dressing. This versatile salad makes a flavorful healthy meal and a side dish with your dinner.

I love adding more fruits to a salad than veggies. I confess I like my salad sweet and tangy (hence the Asian dressing). This salad is full of fresh, crispy, and crunchy bites. Just add some stir-fried tofu for extra protein.

Homemade Asian dressing

Making this dressing at home is super simple. It requires ingredients that are easily available and mostly stocked at home already.

Let’s talk about the role of the main ingredients of this dressing.

1.Soy sauce and vinegar give this dressing saltiness and umami it requires.

2.Balsamic vinegar and distilled vinegar are the sourness contributors.

3.Sesame oil has an earthy and nutty flavor that adds a punch of flavor.

4.Garlic and ginger give a pungent and spicy aroma to the dressing.

5.Maple syrup adds a balancing taste to the sourness and pungency of other ingredients.

Mix all the ingredients and mix well. Pour it in the spring mix, fruits, and veggies, and toss. Your salad is ready.

Spring Mix Salad with Asian Dressing

Ingredients
  

For the salad

  • 1 bag spring mix or greens (5 oz. or 3 cups)
  • 2 small cucumbers
  • 5 medium strawberries
  • 1 navel Orange
  • 6 halves walnuts (optional)
  • 6-8 pieces almonds (optional)
  • 1 roma tomato
  • 2 sweet peppers (can use bell peppers instead )
  • 1 tbsp roasted peanuts

For the dressing

  • 1 tbsp. extra virgin olive oil
  • 1 tsp. balsamic vinegar
  • 1 tbsp. maple syrup/honey
  • 1/2 tsp. crushed pepper
  • 1/2 tsp. pink salt/sea salt (adjust as per taste)
  • 1/2 tsp. soy sauce
  • 1/2 tsp. distilled vinger/rice vinegar
  • 1 tbsp. sesame oil
  • 1/2 tsp. minced garlic
  • 1/2 tsp. minced ginger (optional but recommended)

Instructions
 

For the salad dressing

  • Combine all the ingredients together and mix well.

For the salad

  • Wash and cut strawberries, oranges, sweet peppers, tomatoes, and cucumber.
  • Combine it with the spring mix in a big bowl.
  • Add the walnuts and almonds .
  • Pour the dressing into the salad and toss to coat.
  • Garnish with roasted peanuts.

Notes

  1. Mix and match fruits and vegetables as per your choice.
  2. Ginger though optional adds to the refreshing flavor of this salad. Do give it a try.
  3. Minced garlic can be substituted with garlic powder.
  4. Add baked/stir-fried tofu for protein.
