How to make Pineapple ice cream?
1.Prepare the pineapple jam
The first step in making this melt-in-the-mouth pineapple ice cream is to get your pineapple jam ready. This needs to be cooled before adding to the whipped cream, hence made in advance and given at least 30 mins to cool down completely.
How to make Pineapple jam for flavoring this ice cream?
This recipe for pineapple jam requires just 2 ingredients. It is made using fresh pineapple which helps enhance the flavor of the jam.
1.Peel and roughly chop the pineapple.
2.Blend it into a pulpy consistency
3.Add the pulp and brown sugar in a heavy bottom saucepan.
4.Cook it on a medium flame for 10 mins. Stir occasionally.
5.Let cool completely.

Can I use fresh pineapple instead of jam?
Yes, you can. However, the high water content in fresh pineapple will make the ice cream icy. Cooking pineapple evaporates the water which helps the ice cream get its smooth texture.
Can I use canned pineapple?
Yes. You can blend the canned pineapples (drained) and add it place of the homemade jam. The sugar content will be higher as compared to the homemade jam. Add little at a time and adjust its quantity according the the sweetness.
2. Place the bowl and beater(s) in the freezer
Place the bowl and the beater(s) in the freezer for at least 15 mins before whipping the cream. This helps fasten the process of whipping.
You can even place the whipping cream in the freezer for 10 mins. The colder the whipping cream, the faster you will get those stiff peaks.
3. Whip the cream till it forms soft peaks then add condensed milk
Pour 2 cups of whipping cream into the cold mixing bowl. Start whipping the cream on medium speed setting. After 2-3 minutes check for soft peaks. Once it starts to form soft peaks add half a can of condensed milk.
How to check for soft peaks?
Turn off the hand mixer and pull the beaters out. The cream will rise when the beaters are pulled out. The peaks will bend down and not be firm enough to stand. This is the stage of soft peaks.
4. Continue to whip till you get stiff peaks
The mixture of whipping cream and condensed milk will continue to get thicker. Stop the beater and check for stiff peaks.
How to check for stiff peaks?
Turn off the hand mixer and pull the beaters out. The whipped cream will rise when the beaters are pulled out. Firm peaks will be formed as seen in the picture.
5. Add pineapple jam
Once you get stiff peaks add the pineapple jam. Make sure the jam has cooled down completely.
Whip on low speed just enough to mix everything together.
6. Transfer to a container
Transfer in a freezer-safe glass container. Even out the surface, place the lid and freeze it for a least 8 hours. Enjoy your pineapple ice cream in a cone or just like that!

- 2 cups heavy whipping cream (chilled)
- 1/2 can sweetened condensed milk (approx. 7 oz)
- 1 tsp vanilla extract (optional)
Instructions
Pineapple Jam
- Peel and roughly chop the pineapple.
- Blend it into a pulp consistency. If you prefer a smooth texture then blend into a smooth paste.
- Add the pulp and brown sugar in a heavy bottom saucepan.
- Cook it on medium flame for 10 mins. Stir occasionally.It will change into a dark orange color.
- Let cool completely.
Pineapple Ice cream
- Chill the large mixing bowl and beaters in the freezer for 15 mins.
- Pour cold whipping cream into the large bowl.
- Whip the cream (on medium speed setting) till it forms soft peaks.
- Add condensed milk.
- Continue to whip the mixture (on medium speed setting)till you get stiff peaks.
- Add pineapple jam and vanilla extract (optional).
- Whip on low speed just enough to mix everything together.
- Transfer in a freezer-safe glass container and even out the surface.
- Freeze the mixture for at least 8 hours.
